Paul's Buttermilk Pancakes

Our lives have never been the same since we had Paul’s pancakes!  Buttermilk is now a staple in our fridge.  This recipe comes from M’s first best friend’s family, which happen to also be the kind of friends that make us feel like we won the lottery.

Paul’s Buttermilk Pancakes

1 cup buttermilk

1 egg

3 tbsp melted butter

¾ cup flour

½ tsp salt

1 tsp baking soda

Start by melting the butter.  While the butter melts, sift flour, salt and baking soda into a bowl.  In a separate bowl (I used a 2 cup Pyrex), mix buttermilk, egg and melted butter until smooth.  Add buttermilk mixture to dry ingredients and gently fold together only until dry ingredients are moistened, about 15 strokes.  The gentler your strokes, the fluffier your pancakes will be.  Cook on a lightly greased, medium-hot griddle.

Additions:  We L-O-V-E blueberry pancakes.  Just include blueberries in the buttermilk mixture.  We also treat ourselves to chocolate chip pancakes once in a while.  Same thing.  Add chips to buttermilk mixture.  We recommend mini chips :0)
